Winemaker Notes

A bold crimson red in colour with magenta hues. The nose has rich aromas of black cherries and cassis with forest floor characters. The wine opens with a lively and intense blackberry compote, progressing to the rich, dark chocolate characters and finishing with succulent tannins that continue the experience long after the wine has left your mouth. Enjoy now or cellar for eight to ten years. Enjoy with Angus beef fillet topped with garlic poached marron (what the locals refer to as steak and lake), or roasted sweet potato, onion and brown rice risotto.

Attractive aromas of violet-like florals here, together with ripe blueberries, plums and plenty of spicy oak. The palate is attractively juicy with succulent, sweet flavors of red and blue fruit and approachable yet sturdy tannins. Drink or hold.

Unmistakably Margaret River, this west coast Aussie Cab opens on heady, savory, notes: olive brine, eucalyptus, iodine, ground pepper and currants. The robust palate oozes with plush fruit and spicy, textural tannins.

A noble variety bestowed with both power and concentration, Cabernet Sauvignon enjoys success all over the globe, its best examples showing potential to age beautifully for decades. Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.
