Winemaker Notes

Almost black in color with a deep red edge, the 2006 Les Pavots reveals a profound bouquet of black cherry, licorice, black currant, blueberry pie, and blackberry, combined with chocolate, vanilla, coffee, black tea, subtle spice notes of cloves and cinnamon and its distinctive touch of "garrigue." Very full-bodied, concentrated yet graceful, the wine confirms the same rich, ripe fruit impressions on the palate with spice and black truffle. The mouth feel is massive and round with silky tannins and hints of mocha leading to a very long finish. Will benefit from three years of cellaring and age gracefully for two decades or more.

    The 2006 Les Pavots (a 2,730-case blend of 77% Cabernet Sauvignon, 13% Cabernet Franc, and the rest Merlot and Petit Verdot) exhibits big notes of chocolate fudge intermixed with dark berry fruit, forest floor, underbrush, and some smoky oak. The wine is full-bodied, with remarkable intensity, low acidity, and a fleshy, opulent mouthfeel. This wine should drink well for 15-20+ years.

Rich and full-bodied without being heavy, this retains its focus and elegance, ending with a long, graceful finish and an espresso bean note.
