Mossback Chalk Hill Cabernet Sauvignon 2017
The aromas of the 2017 Mossback Cabernet Sauvignon are an enticing mix of dark chocolate, leather, and cigar box. The flavors are revealed in layers of raspberry, dried cranberry, and cedar. There are plenty of firm tannins with a hint of minerality on the finish. This is a well-structured Cabernet that will age gracefully for several years.
Pair with a big ribeye steak, juicy ribs or a strong blue cheese.
Blend: 76% Cabernet Sauvignon 19% Merlot 5% Petite Sirah
Mossback is part of the Matchbook Wine Company’s family of brands. Mossback is an old fashioned term for farmer. The Giguiere family has had a long history of farming, and for the Mossback brand has sought fruit from some of the most renowned farmers in the Russian River Valley. Mossback also speaks to the cool weather that contributes to the unique quality of Chardonnay and Pinot Noir from the coastal region.
A noble variety bestowed with both power and concentration, Cabernet Sauvignon enjoys success all over the globe, its best examples showing potential to age beautifully for decades. Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.
