The Castle Hill Series Batch 2 is the second release of this limited edition vintage series that celebrates the art of batching old casks, one of the many methods Milam & Greene enlists to create their award-winning range. Born inside the walls of the historic castle on the hill in Austin, Texas during the quiet months of 2020, The Castle Hill Series showcases Master Blender Heather Greene’s cask selection and blending skills. Just twenty six vintage barrels, each aged for over 13 years, were married to create this award-winning spirit. Each barrel brings its own unique character to the spirit resulting in a stunning bottle of Bourbon. Burnt amber in color. Aromas of warm peach cobbler, brown sugar, and vanillas with hints of almond and milk chocolate. Silky, velvety, and lush on the palate. Finish is warming and long, with just enough tannin for structure.
Although Bourbon may be produced anywhere in the United States, it is most commonly associated with Bourbon County, Kentucky, where it has been produced since the late 18th century. Made from a mash bill containing at least 51% corn, the Bourbon Whiskey distillate must be aged in new, charred white oak barrels. Bourbon Whiskeys are bottled at eighty proof (40% abv) or higher and cannot contain any added color or flavor. A versatile spirit that can be sipped neat, with water or on the rocks, it also performs nicely added to cocktails like the Old Fashioned.
