    Winemaker Notes

Domaine de Montille wines are known for their great aromatic purity. They always favor balance and elegance over power and extraction. The wines are classic expressions of Burgundy, of their appellations in general and of their specific terroirs in particular. The farming methods they use contribute to this individual style, and their winemaking methods aim to avoid excessive outside influences in order to bring out the equilibrium that can be found naturally in Burgundian terroir.

This Rully blanc comes from the lieu dit "Les Chaponnières du Dessus", in the northern portion of Rully, near Chagny. Planted at the bottom of the slope on deep soils that are full of clay and seemingly without a single stone, this organically farmed vineyard is more than 50 years old.

    Maison de Montille, France
In 2003, the sister-and-brother team of Alix and Étienne de Montille created the micro-négociant DEux Montilles. Their goal is to produce predominantly white wines from reliable, top-notch growers in the Côte de Beaune and Côte Chalonnaise to balance the prestigious, mostly red, vineyard holdings of Domaine de Montille. This boutique winemaking project is a natural extension of their common experience in Burgundy. As the children of Volnay legend Hubert de Montille, Alix and Étienne undoubtedly have wine in their veins, yet each also has their own independent accomplishments to be proud of. Étienne has taken over management of the family estate, Domaine de Montille, and served as Director of the Château de Puligny-Montrachet. Alix brings her vast world-class winemaking experience, honed over the years producing white Burgundy both for her family and other well-known properties in the area. Alix purchases fruit from growers only with whom she has been working for years. The de Montilles control all crop levels, the harvest date, and pick the grapes according to the high-standards of Domaine de Montille. All the wines are produced in their recently renovated cellars, located in the famous winegrowing village of Meursault. Now known as Maison de Montille, their wines represent a stylistic approach to winemaking that is directly in line with the heritage and pedigree of their legendary family’s estate, namely purity of fruit, moderate alcohol levels and mineral-driven, textured wines.

Exclusive for its bright and charming whites, Rully is optimally situated in the northern part of the Côte Chalonnaise where light and sandy soils create fresh Chardonnays. Here they have perfumes redolent of acacia or honeysuckle, with bright peach and lemon flavors and a flinty finish. With time, Rully whites evolve to fuller flavors of honey, quince and dried apricot.

Rully is also one of the best sources of premium sparkling Crémant de Bourgogne and while over two-thirds of Rully’s production is white grapes, its reds are also worth seeking out, especially as an introduction to Burgundy Pinot Noir. Rully reds express pleasant aromas of rose, licorice and have ripe, red cherry fruit on the palate. Grésigny, Rabourcé, and Les Cloux are its most popular Premiers Crus.

One of the most popular and versatile white wine grapes, Chardonnay offers a wide range of flavors and styles depending on where it is grown and how it is made. While it tends to flourish in most environments, Chardonnay from its Burgundian homeland produces some of the most remarkable and longest lived examples. California produces both oaky, buttery styles and leaner, European-inspired wines. Somm Secret—The Burgundian subregion of Chablis, while typically using older oak barrels, produces a bright style similar to the unoaked style. Anyone who doesn't like oaky Chardonnay would likely enjoy Chablis.
