Maestro Dobel Anejo Tequila is a dark amber with bright golden, coppery tones. Offers aromas of toasted oak. On the palate, there is a wood dominant profile, similar to a single malt whiskey with sweet, nutty and vanilla flavors. Agave and fruit notes are present making this an incredibly complex yet smooth liquid. The finish is smooth and long.
This single estate Tequila uses Blue Webber Agave plants harvested between March and July right before the rainy season. Traditional masonry direct steam-heated ovens are used to cook the agave for a period of 36 hours. A 12-hour cooking period without any steam follows, maintaining the heat in the unopened oven. Afterwards, an air-cooling process takes place followed by traditional extraction process with four mills. Fermentation can last up to 72 hours followed by a double distillation in Copper Alembic Stills and then aged for 18 months in New American White Oak Barrels. Each batch is produced using different vintages of the same tequila until the desired characteristics are achieved.

The tequila is hand crafted in small batches and aged in new oak casks from Southen Europe before getting bottled, labeled by hand and individually numbered. The agave is grown for eight to ten years and then hand selected by Jimadores at one of the family's best quality producing ranches as you can read on every bottle. Because of their great complexity, Anejo Tequilas are most often used as a substitute for Brandy or Whiskey in cocktails like the Manhattan or Old Fashioned. Anejo Tequilas must be aged in oak barrels for between one and three years, while Extra Anejo refers to any Tequila aged longer than three years. The prolonged contact with the oak barrel allows the wood to make a much stronger impression on the Tequila by adding toffee, caramel and vanilla to the sweet, spicy agave flavor profile.
