Winemaker Notes

The colour is fresh vibrant pale straw with lime green edges. The nose shows lifted floral lemon and an intense herbaceous dustiness, typical of outstanding years for Margaret River Sauvignon Blanc, with freshly cut grass and a spiciness from the cool climate Semillon fruit. The palate is fresh and zesty but with a luscious full body which adds softness. The dominant flavours are greenbean, lemon and green apple characteristic, with some freshly cut grass and a lingering spiciness. The finish is well balanced and clean with a lingering taste of gooseberries and citrus.

Sometimes light and crisp, other times rich and creamy, Bordeaux White Blends typically consist of Sauvignon Blanc and Semillon. Often, a small amount of Muscadelle or Sauvignon Gris is included for added intrigue. Popularized in Bordeaux, the blend is often mimicked throughout the New World. Somm Secret—Sauternes and Barsac are usually reserved for dessert, but they can be served before, during or after a meal. Try these sweet wines as an aperitif with jamón ibérico, oysters with a spicy mignonette or during dinner alongside hearty Alsatian sausage.
