Winemaker Notes

Boasting generous blackberry and raspberry fruit aromas, the 2007 Knights Valley Cabernet Sauvignon Reserve comes from a vineyard located high up in the hills of the Knights Valley. Late evening and early morning fog help to protect and cool these Cabernet grapes as they mature much slower and reach a fuller maturity than those at the base of the hills. Harvested at their peak of perfection then aged 24 months in French oak barrels, this Reserve Cab is bursting with beautifully full flavors of dark juicy berries, cherry and raspberry, and a rich dark smokiness.

Enjoy this full-bodied Cabernet with your favorite steak and poultry dishes; it also makes a perfect complement to your hearty Italian favorites.

In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.

A small and picturesque valley separating Napa Valley on its south border and Alexander Valley to its north, Knights Valley excels in similar varieties as the two aforementioned appellations, namely red Bordeaux varieties and blends, as well as Sauvignon blanc. Originally established by Beringer Vineyards, today several outstanding producers claim acreage here. The circadian cooling effects of the nearby Pacific Ocean create a nighttime respite for vineyards during the hot growing season.
