Winemaker Notes

95% Sangiovese, 5% Colorino. Average vine age: 33 years.Fermentation process lasts 14 days, with a max temperature of 28°C., in open air tanks with temperature control system. The grapes are inoculated with selected indigenous yeasts. After pressing, the wine is aged for 16-20 months in oak barrels. Transparent ruby and bright, with notes of lavender and cherry, rose hip and pomegranate, has a light dry flower layer. A dynamic vibration of red orange opens the vital sip with its classic tannin designed by an austere but fresh grip. The long finish is tasty and elegant with notes of aromatic herbs, black cherries, mint and licorice root.

    I was surprised to find more smoke and camphor ash in the 2016 Chianti Classico Riserva Cortevecchia, along with some berry, forest floor and bramble. There's also some spice or natural rubber mingling in there. This is a bit unexpected but also more streamlined wine. It's an interesting, food-friendly Sangiovese that would be lots of fun with a platter of caciocavallo and crackers.

    Aromas of spiced plum, blue flower, botanical herb and a whiff of cedar lift out of the glass. Made with organically farmed Sangiovese and 5% Colorino, the smooth, savory palate features juicy Marasca cherry, licorice and tobacco alongside supple tannins. Fresh acidity keeps it balanced.

One of the first wine regions anywhere to be officially recognized and delimited, Chianti Classico is today what was originally defined simply as Chianti. Already identified by the early 18th century as a superior zone, the official name of Chianti was proclaimed upon the area surrounding the townships of Castellina, Radda and Gaiole, just north of Siena, by Cosimo III, Grand Duke of Tuscany in an official decree in 1716.

However, by the 1930s the Italian government had appended this historic zone with additonal land in order to capitalize on the Chianti name. It wasn’t until 1996 that Chianti Classico became autonomous once again when the government granted a separate DOCG (Denominazione di Origine Controllata e Garantita) to its borders. Ever since, Chianti Classico considers itself no longer a subzone of Chianti.

Many Classicos are today made of 100% Sangiovese but can include up to 20% of other approved varieties grown within the Classico borders. The best Classicos will have a bright acidity, supple tannins and be full-bodied with plenty of ripe fruit (plums, black cherry, blackberry). Also common among the best Classicos are expressive notes of cedar, dried herbs, fennel, balsamic or tobacco.
