Winemaker Notes

48% Cabernet Sauvignon, 28% Syrah, 24% Petit Verdot – is simply luscious. Integrated aromas of fir, graphite, and acacia make an excellent nose. A focused attack of crushed flowers, geranium oil, cherries, and plums wash over the palate, and finish with orange peel and toast. Best Optimus ever?

Critical Acclaim

ST 92
International Wine Cellar

Inky purple. An explosively perfumed bouquet displays scents of blackberry, violet, rose and incense, with a strong note of smoky Indian spices. Open-knit, sappy dark fruit flavors show no rough edges and pick up notes of licorice and mint with air. Alluringly silky on the finish, which repeats the floral and spice notes.

RP 90
The Wine Advocate

The 2008 Optimus, a blend of 48% Cabernet Sauvignon, 28% Syrah, and 24% Petit Verdot, plays it close to the vest. Graphite, espresso, chocolate, and black currant notes slowly emerge from the glass of this dense ruby/purple-colored wine. In the mouth, it is an elegant, medium-bodied effort rather than the broad, blockbuster style of past vintages. Fruity, pure, and impeccably well-made, it should age effortlessly for 10-12 years.

L'Aventure, , California
L'Aventure
L'Aventure was founded in 1998 by a French winemaker, Stephan Asseo. After Stephan graduated enology school in Burgundy, the Asseo family bought their first estate, Domaine de Courteillac, in the Bordeaux area in 1982. Later, the family purchased additional properties: Château Robin and Château Fleur-Cardinale in Saint-Emilion. Stephan raised these properties to a level of great quality, while managing some other well-established domaines such as Château Guillot-Clauzel in Pomerol and Château Corbin in St Emilion.

Stephan saw in the New World a unique opportunity to expand his experience, while gaining more freedom in viticulture and vinification. He began by looking all over California for land, including Napa/Sonoma and Santa Barbara counties, but it was the terroir and climate of Paso Robles that impressed him the most.

Ranging from cool and foggy in the west to warm and dry in the east, The Santa Ynez Valley is one of California’s most climatically diverse growing areas. The most expansive AVA within the larger Santa Barbara County region, Santa Ynez is also home to a wide variety of soil types and geographical features. To avoid an identity crisis, the appellation is further divided into four distinct sub-AVAs—Sta. Rita Hills, Ballard Canyon, Los Olivos District, and Happy Canyon—each with its own defining characteristics.

As one might expect from such a vast and varied region, a wide selection of grapes is planted here—more than sixty different varieties and counting. Chardonnay and Pinot Noir dominate in the chilly west, while Zinfandel, Rhône blends, and Bordeaux blends rule the arid east. Syrah is successful at both ends of the valley, with a lean and peppery Old-World sensibility closer to the coast and lush berry fruit further inland.

One of the most popular and versatile white wine grapes...

One of the most popular and versatile white wine grapes, Chardonnay offers a wide range of flavors and styles depending on where it’s grown and how it’s made. In Burgundy, Chardonnay produces some of the finest white wines in the world, typically tending towards minimal intervention in the winery and at its best resulting in remarkable longevity. This grape is popular throughout the world, but perhaps its second most important home is in California, where both oaky, buttery styles and leaner, European-inspired wines enjoy great popularity. Oregon, Australia, South America, South Africa, and New Zealand are also significant producers of Chardonnay.

In the Glass

When planted on cool sites, Chardonnay’s flavors tend towards grapefruit, green apple, minerals, and white stone fruit, while warmer locations coax out richer, more tropical flavors of fig, melon, and pineapple. Oak can add notes of vanilla, coconut, and spice (as well as texture), while malolactic fermentation can impart soft, buttery acidity.

Perfect Pairings

Chardonnay is as versatile at the table as it is in the vineyard. The crisp, clean, Chablis-like styles go well with simple seafood, light chicken dishes, and salads. Richer Chardonnays marry well with cream or oil-based sauces.

Sommelier Secret

Since the 1990s, big, oaky, buttery Chardonnays from California have enjoyed explosive popularity. More recently, the pendulum has begun to swing in the opposite direction, towards a clean, crisp style that rarely utilizes new oak. These Old-World style wines have been dubbed the “New California Chardonnays,” and anyone who claims they do not like Chardonnay should give them a try.
