Distiller Notes
La Escondida's Master Distiller lets their mezcal rest in French oak barrels for no longer than nine months. As a result, vanilla, chocolate and tobacco notes from the wood into the mezcal without losing the pure essence of its agave flavor.
Reposado translates literally to ‘rested’ and refers to a Mezcal that has aged in oak barrels between sixty days to one year. This resting time allows the smoky, vegetal flavors and aromas of the young new-make spirit to soften and mellow, letting the complex qualities of the agave and barrel emerge. Depending on the type of barrel used, the wood will impart both color and flavor components of its own, such as molasses, toffee and vanilla.
