Winemaker Notes

Bright crimson red color. The nose is a complex mix of savory notes: crushes herbs, violets, sandalwood, leather and some lovely bright red fruit. The palate is fine and yet powerful. Lush spicy red fruit is complimented by blueberry and bramble notes. Powerful tight-knit tannin and a very linear acidity afford the wine a long a succulent finish.

     Bright and spicy up top, this leads with notes of kirsch and crème de cassis that are complemented by sweet spice, dried purple florals and raspberry leaf. The palate is smooth and satiny at first, with rich fruit tones leading the experience, while firm yet fine tannins enter on the midpalate and carry through with moderate intensity through the earthy, sweet-spiced finish.

    The 2015 Cabernet Sauvignon is open on the nose with a dusty blackberry and soft, ripe yet rustic core, having been blended with 12% Malbec and 3% Cabernet Franc. The full-bodied palate is structured and focused and it shows the vintage character well, with a broad, bold focus of black fruits, a rustic rigidity typical of Stellenbosch and elegant, soft garden herbs notes. The finish is structured and long.

Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.

South Africa’s most famous wine-producing district, Stellenbosch, surrounds the historic town with the same name; fine winemaking here dates back to the late 1600s. Its valleys of granite, sandstone and alluvial loam soils between the towering blue-grey mountains of Stellenbosch, Simonsberg and Helderberg have the capacity to produce beautiful wines from many varieties. The climate is warm Mediterranean, tempered by the cool Atlantic air of nearby False Bay.

Perhaps most well-known for its Pinotage and Bordeaux blends, Stellenbosch also produces noteworthy wines from Syrah, Chenin blanc, Chardonnay and Sauvignon blanc. The district’s wards—Banghoek, Bottelary, Devon Valley, Jonkershoek Valley, Papegaaiberg, Polkadraai Hills and Simonsberg-Stellenbosch—all produce distinctive wines from vines with relatively low yields.
