    Winemaker Notes

    The dark cherry color is the result of a decided intention to show the pigmentation of an excellent maturity. To the nose and mouth it has the vitality of a wine that still needs to rest in the bottle to discover unsuspected touches. The tannins of the fruit and the wood can still be told apart but time will join them.

    Founded in 1647, Bodegas Julián Chivite is the oldest wine producing dynasty in Spain. Over eleven generations, the firm has grown from its original establishment in Navarra to estates in Rioja and Ribera del Duero, and become the most important, as well as one of the most respected, producers and exporters of Navarra's wines. Embracing the best of the region's traditions and the technology that has transformed it from the end of the 1980s onward, Bodegas Julián Chivite has forged a reputation for quality and consistency second to none in the D.O.

    Just north of Spain’s famous Rioja region, Navarra excels in the production of full and fruit-dominant reds and good quality, dry rosés. Garnacha holds most of the land under vine, with Tempranillo coming in second place.

    With hundreds of red grape varieties to choose from, winemakers have the freedom to create a virtually endless assortment of blended wines. In many European regions, strict laws are in place determining the set of varieties that may be used, but in the New World, experimentation is permitted and encouraged. Blending can be utilized to enhance balance or create complexity, lending different layers of flavors and aromas. For example, a variety that creates a fruity and full-bodied wine would do well combined with one that is naturally high in acidity and tannins. Sometimes small amounts of a particular variety are added to boost color or aromatics. Blending can take place before or after fermentation, with the latter, more popular option giving more control to the winemaker over the final qualities of the wine.
