Winemaker Notes

This Pouilly-Fumé is a Sauvignon Blanc made from grapes grown in siliceous clay and clay-limestone soils. It is the blending of these wines made from grapes grown in two different types of soil that gives this Pouilly-Fumé “Les Chante-Alouettes” its intensity and aromatic richness. Flinty soil adds a smoky touch of gunflint while clay lends floral notes and brings out the wine’s richness on the palate.

This wine may be enjoyed as an aperitif. It is the perfect match for crustaceans, shellfish, and raw or cooked fish. It may also be served with white meats (poultry, veal) and goat’s cheeses.

Capable of a vast array of styles, Sauvignon Blanc is a crisp, refreshing variety that equally reflects both terroir and varietal character. Though it can vary depending on where it is grown, a couple of commonalities always exist—namely, zesty acidity and intense aromatics. This variety is of French provenance. Somm Secret—Along with Cabernet Franc, Sauvignon Blanc is a proud parent of Cabernet Sauvignon. That green bell pepper aroma that all three varieties share is no coincidence—it comes from a high concentration of pyrazines (herbaceous aromatic compounds) inherent to each member of the family.
