Winemaker Notes

A warm, dry season prompted early picking. The fruit was then harvested at night, chilled and crushed. After 6 hours of skin contact, the fruit was pressed to stainless steel tanks and filtered before inoculation. The juice was cold fermented until full, natural carbonation was achieved and the optimum balance between sugar and alcohol was reached. The wine was cold filtered and cold bottled.
