    Pale clear colour with a light green tint. The nose is more backward, more phenolic, definitely too backward and may take even longer to come out from behind the iodine notes. Much more on its reserve but a much greater volume of fruit as well, and also clearly more acidity. Very long finish, with fruit and stones happily cohabiting. A sensational bottle of white Burgundy for the long term.

    Lamy's 2014 Saint-Aubin 1er Cru Derriere Chez Edouard Haute Densite is one of the most tightly wound wines in this tasting, unwinding in the glass to reveal aromas of pear, citrus oil and crisp stone fruit mingled with hints of iodine, freshly baked bread and wet stones. Full-bodied, ample and layered, it's taut and chalky, with huge levels of concentration, racy acids and an immensely long, pungently saline finish. It's a very impressive wine, but patience is still advised. Best After 2024. Rating: 95+

While it tends to flourish in most environments, Chardonnay from its Burgundian homeland produces some of the most remarkable and longest lived examples. California produces both oaky, buttery styles and leaner, European-inspired wines. Somm Secret—The Burgundian subregion of Chablis, while typically using older oak barrels, produces a bright style similar to the unoaked style. Anyone who doesn't like oaky Chardonnay would likely enjoy Chablis.

A classic source of exceptional Chardonnay as well as Pinot Noir, the Côte de Beaune makes up the southern half of the Côte d’Or. Its principal wine-producing villages are Pernand-Vergelesses, Aloxe-Corton, Beaune, Pommard, Volnay, Meursault, Puligny-Montrachet and Chassagne-Montrachet.

The area is named for its own important town of Beaune, which is essentially the center of the Burgundy wine business and where many negociants center their work. Hospices de Beaune, the annual wine auction, is based here as well.
