Winemaker Notes

Earth, black licorice, pomegranate, cassis and mint weave with toasted espresso and caramelized brown sugar to elicit a dark haunting aromatic. Brooding and dark in aroma, the wine comes alive on the palate. Bright, natural acidity (a hallmark of Hourglass) provides structure and lift to the darker cassis and deep, black fruit flavors. Seamless integration from start to finish is a function of polished ripe tannin, which delivers a silky texture and lingering finish.

Decanting for several hours can dramatically open up the aromatics and provide deeper layers of concentration on the palate.

    Hourglass’s flagship wine, the 2007 Cabernet Sauvignon is one of their strongest efforts to date. An inky/purple color is followed by subtle scents of barbecue smoke, black currants, black cherries, licorice, and a hint of oak. Full-bodied, generously endowed, and deep with loads of concentration, purity, and texture, it is approachable now, but should evolve for 20-25 years.

Within the Napa Valley lie many smaller sub-AVAs that express specific characteristics based on situation, slope and soil—as a perfect example, Rutherford’s famous dust or Stags Leap District's tart cherry flavors.
