
Winemaker Notes
The Shiraz grapes were allowed to reach full maturity before harvesting, ensuring that the intensity and richness of the flavours were maximised.
Following primary and malolactic fermentation the wine was matured for twelve months in old casks, softening the tannins and mellowing the palate. The complexity and smoothness of the wine was then developed during two years on yeast lees.
By employing a non vintage approach wines from several vintages were blended, generating consistency of style and quality.
Extended maturation on both oak and tirage has highlighted the rich, flavoursome and intense ‘plummy' fruit flavours of Hardys Sparkling Shiraz, while the natural acids and sufficient tannins provide a slightly dry finish. Serve slightly chilled.
