Winemaker Notes

Sourced from the foothills of Mt Canobolas where altitudes reach 3,000 feet, this vineyard has extremely fertile soil, rich in volcanic ash. Fruit was handpicked and then destemmed into a small stainless-steel fermenter. Cold soaked for three days with a light punch down daily. Cooling was then turned off and fermentation commenced with wild yeast. Light punch downs then occurred daily for the duration of the ferment. The ferment was then basket pressed at 2 baume and matured in stainless steel on light lees for 8 months and stirred monthly. No malolactic fermentation took place. The final blend was 70% skin contact and 30% fermented and matured in stainless steel. pH: 3.28, TA: 5.73g/L, RS: 1.10 g/L, Yeast Type: Indigenous

Gewürztraminer, an expressive and aromatically distinctive white grape variety, is considered a noble variety in the Alsace region of France, and produces wonderful wines in the mountainous Alto Adige region of NE Italy. Generally this grape grows well in cooler regions and its natural intensity makes it a great ally for flavorful cuisine such as Indian, Middle Eastern or Moroccan. Somm Secret—Because of a charming perfume and tendency towards slight sweetness, Gewürztraminer makes for an excellent gateway wine for those who love sweet wines but want to venture into the realm of drier whites.

Occupying hillsides of the extinct volcano, Mount Canobolas, the Australian region of Orange has volcanic, clay soils with patches of terra rossa and an ideal environment for the production of lively Chardonnay, aromatic Sauvignon Blanc, and elegant reds from Cabernet Sauvignon, Merlot and Shiraz. At elevations of between 2,000 and 3,300 feet, this is a decidedly cool climate region. It is also nonetheless a major gourmet hotspot, sought out for its restaurants, food festivals and regional specialties like wild berries, local truffles and cheeses.
