A drink-now style that's aging fairly quickly, aromas of cherry cordial and pencil lead, with a cocktail bitters-like herbal nuance, commence. It's medium to full bodied, with succulent red fruit that lends brightness, alongside the freshening acidity. Tannins support rather than overwhelm.

The 2020 Cabernet Sauvignon Farm to Table is easy to drink yet in good shape as it offers plump blackcurrant and cedar aromas. It's lightweight with a well-placed gentle tannin grip, which draws out the finish.

Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.

Nestled into the tip of its southeastern coastline, Victoria is Australia’s smallest mainland state, second most populous and third largest wine producer. Victoria includes the cool regions of Yarra Valley, Mornington Peninsula and Geelong, made famous mainly by impressive Pinot Noir and Chardonnay.

The more inland Heathcote and Bendigo lead the way for complex and textured, full-bodied reds. Rutherglen’s fortified wines compete among the best on the planet.
