An excellent aperitif, it also accompanies asparagus, oysters, raw or cooked fish in court-bouillon and pickled fish: a hodgepodge of Bluefin tuna & lemon salmon olive oil, swordfish marinated in vinegar balsamic and olive oil, avocado shrimp.

That green bell pepper aroma that all three varieties share is no coincidence—it comes from a high concentration of pyrazines (herbaceous aromatic compounds) inherent to each member of the family.
