Minervois, one of the most distinguished AOCs in France’s Languedoc-Roussillon, is celebrated for producing soulful, character-driven reds. The 2020 Domaine des Homs Paul shows a deep ruby hue and opens with enticing notes of spice and tart red fruit. On the palate, it is generous, smooth, and layered with savory spices, smoky hints, and pencil-lead minerality. For a true taste of place, pair it with Southern French classics like cassoulet from Castelnaudary or a rustic lamb shoulder braised with herbs de Provence. In California, it is not uncommon to see Petite Sirah make an appearance.
Recognized for its concentrated and sultry reds made predominantly of Carignan, Grenache and Syrah, this western Languedoc appellation is also famous for the charming and delicate fortified Vin Doux Naturel called Muscat de St. Jean de Minervois. The dry rosé and white wines of Minervois are also worth seeking out.
