This sweet, fortified wine grows on well-exposed terraces of stony, clay-chalk soil. The small, highly concentrated bunches are hand-picked when very ripe with a yield of about 10 hl/ha. They contain over 260 g of natural sugar/L before adding alcohol to halt the fermentation. Following the addition of alcohol, the juice continues to macerate for a few days to intensify its purple color and tannins.
