Winemaker Notes

Purple-red and violet; deep and shining. Black pepper freshly ground and reduced dark berries. Perfumed aromatics hinting at the tiny presence of Riesling in the mix. The dark and concentrated fruits open up to bay leaf, balsamic and olive. The reclusive oak bouquet acts like an invisible bodyguard. The palate of this red wine at first seems lean, but hidden depths soon enough emerge. A central track of clean and long acidity keeps to one side the ready-in-wait berry flavors: blue, black, boysen and raspberry. To the other side run the exquisitely fine and gradual tannins. From the mid palate these component elements merge and bind to form a balanced expression of berry and plum flavors and textures. The finish is round yet also clean, with a reprise of that savory/ berry flavour and inky/grippy amalgamation.

    Made by fermenting whole-bunch Shiraz on top of Riesling skins, the 2018 Lion's Tooth of McLaren Vale Shiraz Riesling boasts intriguing floral, tea-like scents combined with bright berry fruit on the nose. Medium to full-bodied, it's silky-textured on the palate, showing ample structure, tension and length, with a firm wash of dusty tannins marking the finish. It appears to have the requisite balance and concentration to age successfully for a decade or more.

Known for opulent red wines with intense power and concentration, McLaren Vale is home to perhaps the most “classic” style of Australian Shiraz. Vinified on its own or in Rhône Blends, these hot-climate wines are deeply colored and high in extract with signature hints of dark chocolate and licorice. Cabernet Sauvignon is also produced in a similar style.

Whites, often made from Chardonnay or Sauvignon Blanc tend to be opulent and full of tropical, stone and citrus fruit.
