The 2019 OVIS Cabernet Sauvignon is the culmination of years of thoughtful work inboth the vineyard, and the winery. This blend is a combination of their highest tiered vineyard parcels, farmed specifically for maximum concentration and flavor. Thedeep garnet color, wonderful aromatics, and matured tannins are a dead giveaway of it's High Valley origin. Sweet aromas of cherries, plums, and cassis are balancedwith savory notes of thyme, and anis. The powerful tannins have softened through extended aging in a mix of new and used French oak barrels.
This wine is perfect for your next dinner party, but will also hold up for many years to come.

This wine is opulent, with aromas of blackberry, boysenberry, cinnamon and violet. The palate offers blueberry, huckleberry, brûléed orange slices, black-tea leaf and vanilla cream gliding into dried herbs and a silky finish. This bottling delivers true mountain fruit at its best.

Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.
Sitting on the northeast side of the Clear Lake appellation, this warm area boasts multiple soil types that allow growers a lot of flexibility and experimentation with grape varieties. While Sauvignon blanc is a mainstay, this zone excels with Zinfandel, Petite Sirah, as well as other less common varieties like Barbera and Tempranillo.
