Winemaker Notes

Clear and bright with a light pink hue. Floral and delicate with aromas of white flowers and passion fruit. Delicate acidity with notes of peach, orange peel and exotic fruits.

Symphony Rose is a great wine for gastronomy and is at its best when served with fine cuisine and high quality produce. Enjoy with truffle and scallop risotto, seafood, sushi and Thai dishes. Serve chilled at 46 °F.

Pale yellow-pink. Compellingly good haunting, nutty, marrowy scents as well as floral. Lush, full, soft and generous on the palate. Lean and tight with nice fruit and a delicate, long finish. A very good, scented rose.

Although it is not indicated on the label, the fruit for this Jean-Pierre Fayard family wine comes from the La Londe cru region. The wine with its organically grown grapes is complex, ripe and fruity. It has great elegance and a stylish character that comes from the cool collected acidity and red-fruit flavors.

A blend of grenache and cinsault from a vineyard planted in 1936 in La Londe-les-Maures, this is fleshy with plummy flavors, with a lime-zest lift. Notes of orange blossom add a gentle fragrance, but it's the texture -- full yet not heavy -- that makes this especially appealing.

The Château Sainte Marguerite was created in 1929 on the base of an old farm house cultivated since Antiquity. André Chevillon is the founder of the winery, which was obtained in 1955 as a Cru Classé. This Cru Classé distinction officially recognizes the founders of the A.O.C. Côtes de Provence production area are ensuring a regularity of quality and authenticity.

In 1977, Brigitte et Jean-Pierre Fayard acquired the Château Sainte Marguerite, as a fund raiser for The Foundation of France. This sale would finance a musical prize in the name of the former owner.

Nowadays, the Fayard family continues this search of excellence while passionately and with talent creating wines known and recognized by all.

Cotes de Provence

Cotes de Provence is an extensive but valuable appellation that includes vineyards bordering the main Provence appellations and extending all the way east to the border of Italy. Its sites vary from subalpine hills, which receive the cooling effects of the mountains to the north, to the coastal St-Tropez, a warm Mediterranean wine-producing region.

Here there is a new focus on quality rosé, as it defines four fifths of the region’s wines. Following in the rosé footsteps, a lot of new effort is going into the region’s red production. A new generation has turned its focus on high quality Grenache, Syrah, Cinsault and Carignan. Cotes de Provence white wines, which represent a miniscule part of the region as far as volume, are nonetheless worthy of consideration and can include any combination of Clairette, Semillon, Ugni Blanc and Vermentino.

Whether it’s playful and fun or savory and serious, most rosé today is not your grandmother’s White Zinfandel, though that category remains strong. Pink wine has recently become quite trendy, and this time around it’s commonly quite dry. It is produced throughout the world from a vast array of grape varieties, but the most successful sources are California, southern France (particularly Provence), and parts of Spain and Italy.

Since the pigment in red wines comes from keeping fermenting juice in contact with the grape skins for an extended period, it follows that a pink wine can be made using just a brief period of skin contact—usually just a couple of days. The resulting color will depend on the grape variety and the winemaking style, ranging from pale salmon to deep magenta. These wines are typically fresh and fruity, fermented at cool temperatures in stainless steel to preserve the primary aromas and flavors. Most rosé, with a few notable exceptions, should be drunk rather young, within a few years of the vintage.
