Distiller Notes

Cenote is for tequila explorers who are interested in discovering something new to share with friends. Named after the natural phenomena of Mexico’s clean-water underground cenotes, Cenote is born from hand-picked agave and the purest of water. Their water is volcanic water filtered through the earth to their artisanal well, the closest well to the Jalisco volcano, and then filtered through a proprietary coconut-fiber filter and ionized with Mexican silver.
100% Blue Weber agave of course, uniquely ALL their varieties touch wood, including the Blanco which is aged for 21 days. Cenote Tequila balances fragrant cooked agave with delicate wood notes by lightly charring our barrels to allow the agave to shine through. Cenote Tequila is a fresh, pure tequila and proud to have sustainable values made in a green-certified distillery.

Because of their great complexity, Anejo Tequilas are most often used as a substitute for Brandy or Whiskey in cocktails like the Manhattan or Old Fashioned. Anejo Tequilas must be aged in oak barrels for between one and three years, while Extra Anejo refers to any Tequila aged longer than three years. The prolonged contact with the oak barrel allows the wood to make a much stronger impression on the Tequila by adding toffee, caramel and vanilla to the sweet, spicy agave flavor profile.
