Winemaker Notes
This is a wine of bright acidity, moderate alcohol, and great depth of flavor. These varietals complement each other as the rounder and honey-like tones of the Semillon are a counterpoint to the citrus, mineral and sharper tones of the Sauvignon Blanc. The barrel fermentation and barrel aging further harmonize the wine, giving it a gracefulness.
Blend: 80% Sauvignon Blanc, 20% Semillon
Sometimes light and crisp, other times rich and creamy, Bordeaux White Blends typically consist of Sauvignon Blanc and Semillon. Often, a small amount of Muscadelle or Sauvignon Gris is included for added intrigue. Popularized in Bordeaux, the blend is often mimicked throughout the New World. Somm Secret—Sauternes and Barsac are usually reserved for dessert, but they can be served before, during or after a meal. Try these sweet wines as an aperitif with jamón ibérico, oysters with a spicy mignonette or during dinner alongside hearty Alsatian sausage.
A Sonoma sub-appellation whose boundaries cover the northeastern corner of the Russian River Valley AVA, the Chalk Hill growing area is named after its unique chalky and white, volcanic ash soils. This terrain has proven successful with white varieties, namely Chardonnay and Sauvignon blanc.
