    Somm Note

    Winemaker Notes

This generous wine encompasses the true varietal character and power of Cabernet Sauvignon sourced from prized vineyard sites throughout California. An aromatic lift of fresh cherry, dry thyme and toasted black peppercorn abound from the glass. On the palate, flavors of black cherry and plum compote frame the heart of this wine. Firm tannins, balanced acidity and compelling layers of semi-sweet chocolate and dark roast espresso beans defines the long and layered finish of this wine.

Legend has it that once a champion always a champion; because to settle for less is not acceptable. This clearly exemplifies Michael Bello. In 2000, determined to produce a premium Cabernet Sauvignon, Michael purchased a piece of prime real estate located in the Napa Valley’s Rutherford Bench district. He set about constructing a French farmhouse with materials imported from France, incorporating details that had never been seen before in Napa Valley. His dream to produce a quality boutique Cabernet Sauvignon was set in motion.

Winemaker Ross Wallace is a 1999 graduate of Fresno State University with a Bachelor of Science in Food and Nutritional Science—Enology Option. Today, a 15-year Napa resident, he comes to Bello from tenures as winemaker at Hunnicutt Wine Company and cult-favorite Bryant Family Vineyards in St. Helena, as well as positions at other well-regarded Napa Valley wineries including Laird Family Estate, Nickel and Nickel Vineyards, Grgich Hills Estate, and Groth Vineyards as well as Craggy Range Winery in New Zealand.

Covering the most vine acreage in the state compared to any other red wine variety, Cabernet Sauvignon produces as much wine in California as Merlot and Pinot Noir combined. The state’s diverse terrain and microclimates, as well as the freedom of its winemakers, allow for an incredible range of wine styles from this single grape.

California’s most famous region—and especially for Cabernet Sauvignon—is the acclaimed Napa Valley. While Cabernet is successful throughout the world, rarely has it achieved such merit as it does from the Napa Valley. At this point the two are so intrinsically linked that it is difficult to discuss one without the other.

Napa’s closest neighbor, Sonoma County, does an impressive job keeping up with Napa’s fame and glory. Alexander Valley, Sonoma Mountain, Moon Mountain and Knights Valley contribute to the lot of some of California’s top-rated Cabernet Sauvignon.

Lake County in California’s North Coast has become a focus for some of Napa’s more respected growers. From the Central Coast come iconic examples of classic California Cabernet; Lodi and the Sierra Foothills are great budget-friendly sources of amicable Cabernets.
