Winemaker Notes

This wine, with its rich black ruby color, exudes aromas of ripe, deeply concentrated fruit, Asian spices, cocoa butter and sweet vanilla. It fills the mouths with firm, dense, luscious fruit and fine tannins.

Winemaker Francoise Peschon describes the wine as: delicious, opulent, smooth and seamless, with layered flavors of cassis, plum, toffee and spice that coat the palate, followed by an exceptionally long spicy finish. While bursting with fruit, it is impressive in its harmony, balance, and elegance. It should age gracefully for 20 years or more.

Robert Parker's Wine Advocate
I believe the 1995 is the finest produced under the Araujo regime. It is close to perfection. The wine combines extraordinary power and richness with remarkable complexity and finesse. The saturated purple/black color is followed by aromas of sweet vanillin intermixed with riveting scents of black currants, minerals, exotic spices, coffee, and toast. There is nothing garish about this subtle yet powerful giant of a wine. A Napa Valley classic, it is full-bodied and extremely rich, yet retains its sense of balance and symmetry. This fabulous Cabernet Sauvignon should age effortlessly for 30 or more years. Anticipated maturity: 2001-2030.

Wine Spectator
A delightfully rich, vibrant and complex wine that is aging very gracefully. The core flavors are well-focused and offer a mix of mature red currant, plum and floral scents, with a touch of anise and mineral on the finish. Ripe tannins let the flavors glide through the finish, where mocha adds a nice added dimension.--1995 California Cabernet retrospective. Drink now through 2015. 2,500 cases made.

Since 1971, some of California's most ageworthy and intensely-flavored Cabernet Sauvignons have been made from grapes grown at the Eisele Vineyard, located on a benchland near the northern end of Napa Valley, just east of Calistoga. Protected by the Palisades Mountains to the north and cooled by westerly breezes from the Chalk Hill Gap, this 38-acre vineyard is planted on warm cobbly soils that produce a low-yielding crop of exceptionally concentrated fruit. Bart and Daphne Araujo acquired the Eisele Vineyard in 1990, and committed to producing only wines of the highest caliber and distinction. Araujo Estate produces 4 wines each vintage: Cabernet Sauvignon Eisele Vineyard, Altagracia, Syrah Eisele Vineyard and Sauvignon Blanc Eisele Vineyard.

One of Napa Valley’s oldest wine growing subregions but last to gain appellation status, Calistoga occupies the northernmost section of the valley. Beginning at the foot of Mount St. Helena, its vineyards stretch over steep canyons and roll out onto the valley floor. The soils in Calistoga are volcanic, which means they are heavy in minerals, low in organic matter and allow good drainage for vine roots, creating less green growth and more concentration of flavor within the grape berries.

Summer days are very hot but most nights cool down with moist ocean breezes sneaking in over the Mayacamas Mountains or from Knights Valley to its northwest.

Cabernet Sauvignon is the area’s star variety with Zinfandel coming in a strong second, though the latter commands far less price per tonnage so continues to be outshined by Cabernet in vineyard acreage, save for some important exceptions.

A noble variety bestowed with both power and concentration, Cabernet Sauvignon enjoys success all over the globe. Inherently high in tannins and acidity, the best bottlings of Cabernet can age beautifully for decades. Cabernet Sauvignon flourishes in temperate climates like Bordeaux where it forms the base of the Medoc reds. These blends are typically mostly Cabernet with Merlot and smaller amounts of some combination of Cabernet Franc, Malbec and Petit Verdot. (Enjoying a great deal of success in various regions around the world, this blend is now globally referred to as a Bordeaux Blend.) Cabernet Sauvignon from the Napa Valley is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines.

Tasting Notes for Cabernet Sauvignon

Cabernet Sauvignon is a dry red wine rich in color, tannin and extract. It expresses notes of blackberry, cassis, plum, currant, spice and tobacco. In the Old World you'll often find the more earthy side of Cabernet. In warmer regions like California, Washington, Argentina, Chile and Australia, you can typically expect more upfront fruit flavors.

Perfect Food Pairings for Cabernet Sauvignon

Cabernet Sauvignon is right at home with rich, intense meat dishes—beef, lamb and venison, in particular—where its opulent fruit and decisive tannins make an equal match to the dense protein of the meat. With a mature Cabernet, opt for tender, slow-cooked meat dishes.

Sommelier Secrets for Cabernet Sauvignon

Despite the modern importance and ubiquity of Cabernet Sauvignon, it is actually a relatively young variety. In 1997, DNA profiling revealed the grape to be a spontaneous crossing of Cabernet Franc and Sauvignon Blanc which took place in 17th century southwestern France.
