Generous quantities of hand-picked hedgerow sloes, combined with just the right amount of sugar, are added to the London Dry gin. 6 O'clock then leaves it all to soak slowly for at least six months. The high 'sloe berries to gin' ratio combined with its lengthy maturation process achieves a smooth, intensely rich and fruity flavor that retains some of that just-picked tartness.
