A third generation Sonoman, Dana Epperson is the gifted winemaker who guides Decoy’s winemaking. She works collaboratively with the vineyard and winemaking teams to ensure the wines reflect the Decoy signature style, and its unwavering commitment to quality.

Wine.com: What inspired you while creating the debut Decoy Brut Cuvée Sparkling Wine?
Dana Epperson: Who doesn’t love bubbles?! Our team jumped at the chance to create a sparkling that would represent the premium quality of our other Decoy wines. In the process we have gained new winemaking techniques and methodology in order to give this sparkling our unique Decoy twist.
W: At this price point people might be amazed to learn that you use traditional Champagne winemaking techniques, why did you opt to use this method?
DE: Utilizing traditional Champagne winemaking techniques allows us to produce the premium quality profile that people except when picking out a bottle of Decoy. Since this process includes secondary fermentation and aging in bottle, the yeast naturally produce carbonation while also creating a nicely balanced creaminess from the yeast autolysis during aging. Our goal is to create a bright, well balanced sparkling that has layers of complexity on the palate.

W: Any tips for the perfect July 4th cookout Decoy Brut Cuvee pairing??
DE: I love creating charcuterie boards for large gatherings, especially for holidays like the Fourth of July. Its fun to mix them up with an array of hard and soft cheeses, non-dairy spreads, olives, marcona almonds, berries and of course some themed holiday décor. Incorporating stars and stripes with a little sparkle. All of these delicious appetizers are perfect for pairing with our Decoy Brut Cuvee, the bright acid contrasts nicely with the rich cheeses, spreads and olives and the fresh berries and almonds complement the fresh fruit and nutty aromas.
