One of the most widely consumed distilled spirits on the planet, Soju is a clear Korean liquor whose production started in the 13th century when invading Mongols brought distillation techniques to the Korean Peninsula. Soju can be made from a wide variety of starches including rice, wheat, potatoes and tapioca, and can vary widely in alcoholicity from 16.8% to 53%. It is often consumed straight and chilled, or over ice, but also makes an excellent, slightly sweeter substitute for Vodka in cocktails.
