Winemaker Notes

Bright shiny copper in color. The aroma is elegant with fine clean fruit notes of pears and apples but with a luxurious ripeness. The mouth-feel is vibrant and has lovely spiciness and a rich texture with fine tannins. It is livened up by nice acidity and a classic minerality and salinity. This dry rosé is very savory and has a long finish with creamy yeast and delicate chalk notes. This may be the most food-friendly Summer in a Bottle to date and is certainly the perfect summer wine!

Blend: 48.5% Merlot, 17% Chardonnay, 13% Cabernet Sauvignon, 13% Cabernet Franc, 3% Gewürztraminer, 3% Sauvignon Blanc, 2% Pinot Meunier, 0.5% Pinot Blanc

Serve chilled, solo or as a complement to almost any food. At cocktail parties, it will shine alongside hors d’oeuvres such as smoked salmon, lobster, shrimp, carpaccio and soft cheeses. It can also complement main-course fish and pork dishes, and at Thanksgiving, it is perfect with turkey.

The 2020 Summer in a Bottle is the winery's most atmospheric pink, in large part, to be sure, because of its beautiful flowered bottle. It is a kitchen-sink blend of 48.5% Merlot, 17% Chardonnay, 13% Cabernet Sauvignon, 13% Cabernet Franc and dollops of other grapes, including a little Gewürztraminer, for the rest. It is all unoaked, near bone dry and comes in at 12.8% alcohol. There is no malolactic fermentation. If you wonder what makes this different than the estate pink, the answer to me is that this is bolder and a little more flamboyant. They aren't night-and-day different, but the estate pink seems more refined and balanced by comparison. That's relative, to be sure. This also substitutes some Cabernet Franc for part of the Cabernet Sauvignon component on the estate bottling. The acidity is beautiful here, supporting the fruit, lifting it and leading to a juicy finish. It has a certain something different to it that makes it lively and intriguing. It's pretty delicious but also seriously styled. It's definitely not a Johnny-one-note. That said, the estate pink is $8 less. Of course, you don't get the pretty bottle there.

The unique combination of Bridgehampton loam soil and breezes from the Atlantic Ocean, located 2.6 miles from the estate, provide maritime conditions perfect for achieving the balance of ripeness and acidity that has come to define Wölffer’s signature style: food friendly, elegant and built for longevity. Whether it’s playful and fun or savory and serious, most rosé today is not your grandmother’s White Zinfandel, though that category remains strong. Pink wine has recently become quite trendy, and this time around it’s commonly quite dry. Since the pigment in red wines comes from keeping fermenting juice in contact with the grape skins for an extended period, it follows that a pink wine can be made using just a brief period of skin contact—usually just a couple of days. The resulting color depends on grape variety and winemaking style, ranging from pale salmon to deep magenta.
