"Single Barrel Straight Rye Whiskey (nearly 18YO), Small Batch, Single Island Philippine Rum Casks. Nose: Rich lush vanilla aromas give way to delicate tropical notes including underripe bananas, freshly picked lemon and molasses. Palate: Abundant fresh ground cinnamon with citrus zest, butterscotch, light toffee notes. Finish: Tanned leather, light brown sugar, nutmeg.and allspice with a long-lasting blackpepper rye spice "

Earthy and pleasantly pungent on the nose, softening in the glass and yielding to aromas of cooked dark fruit, figs, raisins, and nougat. The palate is chewy, rich, and has balanced heat—offering flavors of raspberry preserves and other jammy fruits, along with cinnamon and dark chocolate. Excellent length on a finish of sweet vanilla and more cinnamon, plus subtle red fruit, sweet corn, and an earthy note at the end.

With help from Master Distiller Dave Pickerell, they discovered and purchased an incredible stock of 10 year old blending Whiskey in Canada that was being profoundly misused. That initial stock, for which they are forever grateful, is what kicked off the grand adventure.
