Winemaker Notes

The Hidden Sea is a premium wine company making wines that matter for people who care. Located in South Australia, which 26 million years ago was home to a thriving marine ecosystem. A series of dramatic ice ages caused the Great Southern Ocean to recede, leaving the area rich with nutrients and deep limestone deposits for the grapes to flourish today. The Hidden Sea honors their ocean heritage by partnering with ReSea Project and setting the world-standard for ocean waste plastic removal. Together, they’re making a positive, verifiable impact on the planet.

South Australia is the historic heart of Australian wine, a great wine capital of the world, and home to some of the most famous regions. It produces more than 80% of Australia’s premium wine from some of the oldest vines in the world. There is an abundance of varieties and wide spectrum of styles to explore. From the rogue to refined, discover Australian wines that are far from ordinary.

Whether it’s playful and fun or savory and serious, most rosé today is not your grandmother’s White Zinfandel, though that category remains strong. Pink wine has recently become quite trendy, and this time around it’s commonly quite dry. Since the pigment in red wines comes from keeping fermenting juice in contact with the grape skins for an extended period, it follows that a pink wine can be made using just a brief period of skin contact—usually just a couple of days. The resulting color depends on grape variety and winemaking style, ranging from pale salmon to deep magenta.
