Distiller Notes
A heady, herbaceous smack to the senses. Opens with spicy black licorice, slowly evolves into citrus and grass profiles with a dose of sarsaparilla. Because of the abundance of essential oils, it’s rich and viscous on the palate.
Proof: 120
Founded in 1982, St. George Spirits is America’s original craft distillery.
Over nearly four decades at the vanguard of the American craft spirits movement, St. George Spirits has grown from a one-man operation dedicated to brandy into one of the most prolific, innovative, and acclaimed distilleries in the nation. Now owned and operated by master distiller Lance Winters (a James Beard nominee many times over) and head distiller Dave Smith, St. George has been inducted into the Spirit Journal Hall of Fame, called “a leading light in the American artisanal spirits movement” (Whisky Advocate), and named “best craft distiller in America” (Thrillist).
Today, St. George’s family of world-class spirits includes single malt whiskey, absinthe, and several gins, vodkas, brandies, and liqueurs. The distillery is located in a former Naval aircraft hangar in Alameda, California, and is open to the public for educational distillery tours and guided spirits tastings.
Enjoyed for hundreds of years in Europe as a restorative and cure for many types of maladies, Absinthe reached its peak popularity in late 19th and early 20th century Parisian bars and cafés where it was a favorite of Hemingway, Joyce, Van Gogh and Picasso. Similar to Gin, Absinthe is a neutral, high proof spirit (110 to 144) infused with a variety of herbs and botanicals. These typically include green anise, sweet fennel and grand wormwood. Absinthe is most often light green in color but can also be clear.
