The subdued aroma is woody, with just a hint of vanilla. But the palate tells a more complex story, opening with oak and vanilla before rounding to dark fruit, a fleeting hint of pineapple and dusty cocoa powder. Cinnamon and cayenne sparks emerge on the long, warming finish. Made primarily with Barbados rum blended with a smaller amount of older Jamaican rum (aged 10 to 15 years).
Most often aged in heavily charred barrels for a longer period compared to other styles of Rum, Dark Rums are also produced entirely from caramelized sugar or molasses. This process yields some of the strongest and sweetest flavors that the spirits world has to offer. Dark Rums can serve as an excellent base for tropical cocktails, with the added spice and caramel notes casting an exotic edge to drinks like Daquiris and Hurricanes.
