Winemaker Notes
Medium-full bodied wine and low alcohol, allows nuances of dark black fruit, purple violets, and a slight hint of dried herbs to explode in the nose and on the palate. The combination of well-drained, alluvial soils, old vines, daytime heat, and nighttime cool, creates fruit that is uncommonly structured and ripe, yet fresh and mineral driven.
Blend: 91% Cabernet Sauvignon, 6% Petite Verdot, 3% Cabernet Franc
A noble variety bestowed with both power and concentration, Cabernet Sauvignon enjoys success all over the globe, its best examples showing potential to age beautifully for decades. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.
Taking advantage of the cool Pacific breezes that arrive via gaps between the Gabilan Range and the Santa Lucia Mountains, San Benito AVA is a great Central coast source for cool climate whites and Pinot noir.
