Winemaker Notes

Winemaker Todd Stevens pursues complex aromatics while remaining true to varietal characteristics. As with the rest of the Neudorf portfolio textural interest is a major component. In the winery we use 100% wild ferment, and this along with 20% barrel fermentation moderates the high tone nature of the variety.  

On the nose a bouquet of bright blossom is underpinned by fresh summer fruits. The feel across the palate is poised, succulent, bracing and sophisticated. This Sauvignon exudes restraint. It is refreshing and textural, alluring and moreish.

    An enticing, mineral, floral then varietal bouquet with aromas of silica and clay soil, rosé, peach and sweet lemon. There's a soft herb layer adding finesse and complexity. Youthful, crisp, refreshing and dry palate, with a gentle saline note and flavours of lemon, peach and barley sugar before more soft sage-like herbs return.

    This has attractively exotic guava and lime with fresh-herb notes, too. The palate is concentrated and has sturdy textural presence with lime and green mango, as well as some white peach. From organically grown grapes. Drink now.

Capable of a vast array of styles, Sauvignon Blanc is a crisp, refreshing variety that equally reflects both terroir and varietal character. Though it can vary depending on where it is grown, a couple of commonalities always exist—namely, zesty acidity and intense aromatics. This variety is of French provenance. Somm Secret—Along with Cabernet Franc, Sauvignon Blanc is a proud parent of Cabernet Sauvignon. That green bell pepper aroma that all three varieties share is no coincidence—it comes from a high concentration of pyrazines (herbaceous aromatic compounds) inherent to each member of the family.
