Distiller Notes
Fragrant woodland spices with notes of cinnamon and nutmeg to the fore accompanied by aromatic oils and earthy pot still notes. Delicate hints of nectarine develop to create a zesty fruit note with dustings of white pepper. Additional aromas of dairy fudge and vanilla further accentuate the sweet nature of the whiskey.
Fortified by the Irish Oak, the pot still spices lead with a heightened intensity thanks to the rich wood tannins before subsiding to reveal velvety tones of caramel with sweet stewed apple and touches of orange peel. Dark chocolate with subtle notes of honeycomb and vanilla weave amongst the spices. Delightfully long finish with the fruits and apices slowly fading, allowing the Irish Oak to linger until the very end.

This one is all about the wood spices and oak up front, backed by runny caramel, banana split, lime zest, and cooking apple spices. The Irish oak spices run riotously, with flavors of vanilla, toffee, baked apple, and nougat settling down reluctantly once cosseted by the indulgent taste of banoffee pie and milk chocolate. More a lovable rogue than an outright troublemaker.
The result of an historically prohibitive tax placed on malted barley by the English crown, Irish Whiskey is most often produced from a combination of un-malted barley and other grains. Whereas most other Whiskeys are twice distilled, Irish Whiskeys are distilled three times in a column still and must mature in oak barrels for a minimum of three years. These intricate production steps combine to make them lighter, smoother and more approachable than other styles.
