Distiller Notes
Mi Campo tequila begins as 100% Blue Weber Agave, matured for seven years. They gently squeeze the cooked piñas, illuminating the agave plant's natural honey characteristic and quelling any trace of bitterness.
Their Reposado is double distilled, then fermented in open-air tanks, amid fragrant citrus trees, resting for three months in the same French oak barrels used for aging Napa Valley Pinot Noir and Cabernet Sauvignon, imparting an incredibly smooth taste.
The fragrant nose opens with cooked agave, ripe banana, apple, chocolate and cappuccino, layered over aromas of vanilla, cinnamon, pumpkin and clove. On the palate, honey maple, peaches and cream, white chocolate and a thread of minerality segues to a pepper and toasted oak finish.
Tequila Reposado refers to Tequilas that have been ‘rested’, or aged, in oak barrels for a minimum of two months but not more than one year. Depending on the specific flavors a tequilero wishes to impart on the spirit, a variety of different barrels may be used, from Brandy and Bourbon, to Wine and Sherry. The time spent on the wood allows Reposado Tequilas to mellow as they age, softening and rounding powerful flavor components brought by the agave and marrying them to subtle notes of caramel and vanilla brought by the barrel itself.
