Distiller Notes
An uncommonly smooth tequila for any occasion. Dobel Silver uses Blue Webber Agave plants harvested between March and July right before the rainy season. Traditional masonry direct steam-heated ovens are used to cook the agave for a period of 36 hours. A 12-hour cooking period without any steam follows, maintaining the heat in the unopened oven. Afterwards, an air-cooling process takes place followed by traditional extraction process with four mills. Fermentation can last up to 72 hours followed by a double distillation in Copper Alembic Stills that is painstakingly overseen by the master tequilero during the entire process, each batch is produced using different vintages of the same tequila until the desired characteristics are achieved.
The tequila is a bright white crystalline color. On the nose, a complex blend of caramel, cooked agave, butter, olive, dried fruits, fruit and floral notes with perfect balance. On the palate it is sweet with flavors of caramel, honey, maple, walnut, vanilla with an indescribable softness. The finish is woody and smoky with notes of sweet agave.

The sweet aroma hints at tropical fruit and white chocolate, underpinned by jalapeño. The buttery palate delivers on the promise of fruit, showing melon, lychee, and grapefruit peel that wind into a delicate whitepepper finish
Tequila Blanco, or ‘white Tequila’, is also known as Tequila Plata, or ‘silver Tequila’. Its clear color is the result of being bottled immediately after distillation instead of being aged in oak barrels like Tequila Reposado or Anejo. Because of their youth and lack of barrel influence, Blanco Tequilas are thought to offer the purest expression of blue agave available, with notes of citrus and pepper. However, they can also be quite forceful and energetic on the palate without the moderating influence of time and wood.
