Aged for longer than a year and a half in mostly new French oak barrels and a small percentage of American oak, the toasts of the barrels are medium. It has a great body, the characteristics of this mezcal are very sui generis, the tones are very aromatic, complex wood smells, aromas and tastes of vanilla, coffee, caramel, floral. To taste you feel pleasant wood sensations, dried fruits (figs, prunes), light smoked.

    Los Amantes Mezcal Anejo integrates the wood aging gracefully and the aromas of cedar plank, lightly smoked caramel-lime and sweet agave is ethereal. Despite an opening curtain of black pepper and singed orange peel, the delicate nature of this spirit is apparent.

Anejo or ‘old’ refers to any Mezcal that has been aged in an oak barrel for one to three years prior to bottling, while those that have been aged for longer are known as Extra Anejo. Typically, the longer a Mezcal is left to rest in oak barrels, the more it will soften and gain complexity as the sweet flavors acquired from the wood marry and mingle with those brought by the agave. As a result of its prolonged barrel aging, Mezcal Anejo has an appearance similar to Whiskey or Brandy and is generally regarded as the most approachable and civilized of Mezcals.
