Distiller Notes
Lighthouse Gin is crafted in small batches using pure sugar cane for the base spirit combined with natural spring water from the New Zealand Remutaka Range’s ancient aquifer. Nine hand selected botanicals are prepared, including hand zesting Yen Ben lemons, which is then macerated in a copper-pot still overnight to extract the flavors before the first distillation. The gin is redistilled without the botanicals. This double distillation process creates a gin with a much more refined, smooth, and elegant palate. The final product is bottled at 40% ABV, an approachable 80 proof that lets the botanicals shine through. Lighthouse Gin offers a low juniper, citrus forward taste profile that is clean, fresh, and vibrant.
Enjoying an enthusiastic resurgence in modern cocktail culture, Gin, a.k.a. ‘Dutch Courage,’ was originally touted as a 16th century cure for cowardice and stomach ailments. Arguably the broadest and most dynamic category of spirits in terms of flavor profiles and production styles, Gin is a distilled grain spirit that derives its primary flavor from juniper berries and secondary flavors from a dazzling array of spices, herbs, fruits and botanicals. It is both produced and enjoyed all around the world and is most commonly mixed into cocktails such as the Martini or simply added to tonic water.
