    Winemaker Notes

    Golden color with silvery glints, clear and bright. Nose of white flowers, white fruits (peach). In mouth, very fresh and balanced, with citrus aromas (lemon), white fruits and a great minerality.

    A favorite as an aperitif, Le Paradou Viognier is one of those rare wines that can be paired with asparagus. Very elegant with grilled fishes, fried squid, scallops, it emphasizes dishes with cheese such as Parmiggiano Risotto and goes well with goat cheeses. For desserts, with apricot pie or even strawberry soups.

    Alexandre & Frédéric Chaudière are from a family that has produced generations of wine-makers at the Château Pesquié in the Ventoux, South of the Rhone Valley. In 2005, when they created the Paradou range, they decided to give themselves a new challenge. These two thirty or so year old brothers have always shared a passion for wine. Since he was a mere boy, Alexandre has been certain that he would become a wine-maker and he studied viticulture and oenology at Mâcon and worked in many of the world’s wine-making regions (Bourgogne, Rheingau, Châteauneuf-du-Pape, Australia, Côte-Rôtie, etc.) to build a solid experience as a wine-maker.

    After Bachelors’ degrees in Philosophy and in History from the Sorbonne and a Masters’ degree from Sciences Po Paris, Frédéric brings a slightly different outlook to wine-making as well as his marketing competence. The project started in the Luberon, but over time the Chaudière brothers decided to avoid the rigours of the AOP to be completely free to create fresh and sexy wines.

    A small category representing the wines that either fall outside of appellation lines or don’t subscribe to the law and traditions set forth by the French government within certain classified appellations, “Vin de France” is a catch-all that includes some of the most basic French wines as well as those of superior quality. The category includes large production, value-driven wines. It also includes some that were made with a great deal of creativity, diligence and talent by those who desire to make wine outside of governmental restrictions. These used to be called Vin de Table (table wine) but were renamed to compete with other European countries' wines of similar quality.

    Full-figured and charmingly floral, Viognier is one of the most important white grapes of the northern Rhône, and the only one allowed in Condrieu and neighboring monopole (an entire appellation dedicated to just one winery), Château Grillet. It is also a blending variety in several appellations throughout the entire Rhône Valley. Viognier is grown throughout much of the rest of the wine world with some degree of success. Look for great New World examples from California, Chile, Oregon, Washington and cooler parts of Australia.

    In the Glass

    This is an aromatic variety making rich, complex and full-bodied white wines redolent of a full bouquet of flowers, stone and tropical fruits and a dash of spice. It is lower in acidity than most white wines, lending to its heavy impression on the palate. While a whiff of Viognier might suggest sweet flavors, these wines are typically quite dry.

    Perfect Pairings

    Viognier is an intense, bold variety that can easily stand up to hearty food like pork loin with apricot stuffing, roasted chicken or chicken Kiev.

    Sommelier Secret

    While Viognier is a white grape, it also plays an important role in the red wines of Côte Rôtie in the northern Rhône. About 5% Viognier is typically co-fermented with the Syrah in order to stabilize the color, and as an added benefit, add a subtle perfume.
