      Distiller Notes

      Ki No Bi Dry Gins a gin that speaks of its place of birth. As clear as the air in the sacred mountains of Kyoto. A fresh aroma of yuzu, and a thread of sansho that lingers like a morning mist in a bamboo forest. The juniper complements and showcases the Japanese botanicals. Ginger root gives a slightly warming, spicy finish.

      Kyoto Distillery is Japan’s first dedicated artisanal gin distillery. Located in the south part of Kyoto city, the distillery shares its locale with sake producers that have been in business for hundreds of years. Locally sourced botanicals have been distilled and treated separately, to capture the optimal amount of flavor from each ingredient.

      Enjoying an enthusiastic resurgence in modern cocktail culture, Gin, a.k.a. ‘Dutch Courage,’ was originally touted as a 16th century cure for cowardice and stomach ailments. Arguably the broadest and most dynamic category of spirits in terms of flavor profiles and production styles, Gin is a distilled grain spirit that derives its primary flavor from juniper berries and secondary flavors from a dazzling array of spices, herbs, fruits and botanicals. It is both produced and enjoyed all around the world and is most commonly mixed into cocktails such as the Martini or simply added to tonic water.
