Hatzidakis makes one of the best expressions of this fragrant grape on Santorini (and there are not many to be found). The 2023 Aidani boasts the artwork of a three-and-a-half-year-old Stella Hatzidakis (she is 26 today), and her drawing symbolizes happiness for what is an accessible and easy-drinking white. Aged quickly for six months in stainless steel, the wine initially shows fragrant Honeycrisp apple and tropical guava. It is a little compact and tight (maybe a hint reduced) but warms up nicely in the glass to more generous aromas. Ten minutes later, it shows acacia flower and sweet peach. It offers medium acidity over a lean-bodied texture.
