Winemaker Notes

Semillon grows in Happs' Three Hills vineyard at Karridale (far south Margaret River) under dry conditions on a wide trellis that results in golden rather than green (chlorophyll rich) fruit and riper flavor. Organic practices in the vineyard, 100% grass mulching, little use of fertilizers, no insecticides etc. The fruit is hand-picked, with juice fermented and aged in stainless steel for nine months. 400 cases made.

Sémillon has the power to create wines with considerable structure, depth and length that will improve for several decades. It is the perfect partner to the vivdly aromatic Sauvignon Blanc. Sémillon especially shines in the Bordeaux region of Sauternes, which produces some of the world’s greatest sweet wines. Somm Secret—Sémillon was so common in South Africa in the 1820s, covering 93% of the country’s vineyard area, it was simply referred to as Wyndruif, or “wine grape.”

Relatively warm and dry, the region is cooled by breezes from the Indian Ocean. Margaret River takes some inspiration from Bordeaux, producing top-quality Cabernet Sauvignons and Bordeaux Blends with firm structure, mouthwatering acidity, balanced alcohol and notes of herbs and spice. For white wines, refreshing blends of Sauvignon Blanc and Semillon as well as complex, age-worthy Chardonnays are regional specialties.
