    Winemaker Notes

    The 2012 Shiraz Cabernet is a dark red color in the glass with a bright purple hue. Vivid aromas of ripe berry fruit, distinctive blackberry, dark plum and mocha are inviting. The palate of the wine is a rich seam of dark berry, cherry and plum fruit which define the soft supple and composed palate. Complementing the dark regional fruit characters are the balanced subtle oak notes of delicate spice and mocha dust from the deft use of seasoned old and new oak maturation. This is a classic blend made from two of the most outstanding varieties of the Limestone Coast, perfectly complementing each other in flavor and structure.

    Covering a long strip of southeastern coastline in South Australia, the Limestone Coast growing region has a moderately cool climate and includes the subregions of Coonawarra, Mount Benson, Mount Gambier, Padthaway, Robe and Wrattonbully.

    Its warm northern and inland areas are recognized for high quality, full-bodied Shiraz and Cabernet Sauvignon. The much cooler Mount Gambier, to the extreme south, is well-suited to Pinot Noir and Chardonnay.

    With hundreds of red grape varieties to choose from, winemakers have the freedom to create a virtually endless assortment of blended wines. In many European regions, strict laws are in place determining the set of varieties that may be used, but in the New World, experimentation is permitted and encouraged. Blending can be utilized to enhance balance or create complexity, lending different layers of flavors and aromas. For example, a variety that creates a fruity and full-bodied wine would do well combined with one that is naturally high in acidity and tannins. Sometimes small amounts of a particular variety are added to boost color or aromatics. Blending can take place before or after fermentation, with the latter, more popular option giving more control to the winemaker over the final qualities of the wine.
